Nakayama Autumn Maple & First Snow Set · Flavors of the Season 2026/10/1~2026/12/31

As the maples deepen in color and the first snow draws near, Nakayama presents the "Autumn Maple & First Snow" set menu,
inspired by the passage from late autumn into winter. Red king crab, Japanese Wagyu, Hokkaido sea urchin, and winter seasonal fish are plated with maple leaves and snowy scenes, capturing the changing season in a single refined meal.
The meal opens with a clear, gentle golden clam soup, followed by seasonal small plates of Hokkaido sea urchin with fresh yuba, persimmon and muscat grapes in a shiraae tofu dressing, and abalone simmered isoni-style. The five-kind sashimi platter is laid on a pure white snowscape, where crimson maple leaves frame medium-fatty tuna, botan shrimp, and seasonal fish, finished with Alishan wasabi — autumn colors and winter snow meeting on a single plate.
For the simmered course, Yellowtail Hosho-maki wraps seasonal Japanese yellowtail in thin sheets of daikon radish, a symbol of growth and good fortune. For the grilled course, Glazed Red King Crab sees crab legs brushed again and again with a mirin and sake glaze and roasted at high heat, served with salt-grilled ginkgo nuts on pine-needle skewers and sudachi jelly. The main course, Japanese Wagyu Konayuki-mi Hot Pot, lightly swishes Wagyu through a snow-white soy milk broth, letting its richness melt gently into the warm soup.
The set also features Shiso & Scallop Tempura, a fatty tuna and sea urchin hand roll, and salmon rice cooked with truffle butter and wild mushrooms. The meal concludes with red bean soup with grilled mochi and Uji matcha mousse — velvety red beans, soft, chewy mochi, and the gentle bitterness of matcha lingering as a warm finish to early winter.
