Nakayama Restaurant presents the limited-time "Chilled Summer Set," built around the theme of "refreshing, nourishing cuisine that captures the season." Featuring summer's abundant gourds and seasonal seafood alongside prized delicacies such as lobster, abalone, Wagyu, and sturgeon caviar, this menu interprets midsummer Japanese cuisine with both seasonal character and refined layers of flavor.
The set opens with King Crab & Caviar Oat Tofu — the Chef builds on a base of creamy oat tofu, crowned with sweet king crab and sturgeon caviar for a delicate, elegant taste of summer. The Assorted Sashimi (Five Kinds) selects medium-fatty tuna, sweet shrimp, amberjack belly, flatfish, and salmon, presenting the ocean's purest sweetness. Simmered Abalone & Winter Melon gently braises seasonal winter melon with abalone for a light, mellow finish, while the Lobster Tempura with Pearl Rice Cracker replaces the traditional batter with pearl rice cracker, lending a lightness that lets the seafood's freshness shine.
Pan-seared Wagyu with Grated Yam & Rock Salt delivers a rich yet balanced experience for the palate; the Eel & Egg Ribbon Mini Donburi follows Japan's summer eel-eating tradition with a deep, harmonious savory flavor; and the meal closes with Loofah & Clam Clear Soup, sweet and cleansing — a graceful finale to this midsummer feast.
